Flounder/sole are in the flatfish family. Flatfish are white meat fish prized for a very mild delicate flavor. Our flounder is caught (harvested) off of the West Coast of the United States. Flounder cooks to a nice pearly white or creamy white color. The Frostmark Brand Flounder is skinless, boned and chemical (or additive free). Fillets cook quickly as they are by nature a thin fish.
