Cod vs. Haddock: Same Family, Different Character
Cod and Haddock are both members of the cod family and share many similarities, but they have distinct characteristics that set them apart. Cod is known for its mild, clean flavor and firm, moist flesh that separates into large, tender flakes when cooked. Its neutral flavor makes it exceptionally versatile, working well in everything from fish and chips and sandwiches to baked and grilled entrées.
Haddock, on the other hand, has a slightly more pronounced, subtly sweet flavor and a finer, more delicate flake. Its flesh is typically softer and more tender than cod, making it especially popular for smoking, baking, frying, and classic seafood preparations.
How to Tell Cod and Haddock Apart
Visually, the two can also be distinguished by their markings: cod typically has a lighter lateral line and a speckled body, while haddock is recognizable by its distinctive dark lateral line and dark spot above its pectoral fin, sometimes called the “thumbprint.”
